- 향신료(香辛料, 영어: spice)는 식물의 열매, 씨앗, 꽃, 뿌리 등을 이용해서 음식의 맛과 향을 북돋거나, 색깔을 내어 식욕을 증진시키고 소화를 촉진시키는 기능을 해주고 육류의 누린내와 생선의 비린내를 없애는 기능도 하는 것을 말한다.
- 한국에서는 음식의 맛을 돋우기 위하여 사용하는 재료의 총칭을 두고 양념(→조미료)이라 한다. 한국 음식에 주로 사용하는 양념에는 간장·된장·고추장·소금·설탕·고춧가루·실고추·기름·후추·식초·깨소금·파·마늘·생강 등이 있다.
